The 99 pavilions are set throughout the 32-acre property, some among the tropical gardens, others with views over the terraced rice paddies and the gently rolling hills beyond. Each has its own outdoor Thai sala complete with a swing sofa from which to while away the day, while inside, sizeable bedrooms with all the prerequisite bells and whistles – from a fully stocked minibar to satellite television and blue tooth speakers – lead to a generous open-plan walk-in wardrobe and bathroom with a separate shower and a bath that requires no coaxing to soak in.

Enjoy the sunset with a pre-dinner cocktail on the upper deck of the pool terrace. For dinner, Sala Mae Rim offers the best of Thai cuisine, and home-style Italian fare is on the menu at Terraces. For something more unusual, the cooking academy, Rim Tai Kitchen, transforms into an interactive street food restaurant where guests can make their way round the stations, interact with the chefs and even have a go and making their own dishes.

There is a full buffet breakfast on offer, but for a tranquil start to your morning, enjoy a private meal in the rice fields, where a gentle breeze sets the mood to indulge in a menu inspired by French chef Stephane Calvet’s childhood memories, complete with an impressive selection of pastries, of course.
